Description
All of the peppers used in our spice blends are harvested fresh from our fields in the Fall and smoked in our smokers on the farm. After smoking they are dried and ground and packaged immediately in order to give you the freshest product possible. There are no preservatives, salts or additives in the blends. We suggest you add salt to your finished product to bring out the best flavor, but we have omitted it for those who are sensitive.
Mole Spice Blend:
Ingredients: a blend of smoked chili peppers, unsweetened cocoa, anchiote seeds, sesame seeds, mexican oregano, cloves, anise, coriander, cumin, & cinnamon.

Easy Chicken mole:
Place about 9 chicken legs or thighs in baking dish and bake at 400 for 20 min.
While chicken is cooking, make the mole sauce: In a skillet over med-high heat, saute a chopped onion in 2 Tbsp olive oil for about 5 minutes (or until slightly caramelized). Add 2-3 smashed garlic cloves and cook 30 seconds. Add 2 c. chicken broth. Simmer 15 min. Remove from heat and let cool. In a blender, add the cooled skillet mixture, 4 Tbsp peanut butter & 1/2 cup mole mix (2 oz).
Remove chicken from oven, pour the mole sauce over the chicken and bake additional 20 min.
